Persimmon Pudding

Ingredients

- 1 cup pureed persimmons
- 1/4 teaspoon baking soda
- 1 egg
- 1 1/4 cups sugar
- 1 cup flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- Dash of nutmeg
- 1 1/4 cups milk
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 325 degrees F.
- Grease a 8×8-inch baking dish.
- In the bowl of a stand mixer fitted with a paddle attachment, combine pureed persimmon and baking soda on low speed. Add egg and sugar, and continue to beat until thoroughly combined. Add flour, baking powder, salt, cinnamon, vanilla and nutmeg. Add the milk and butter, and beat until combined. Pour the mixture into the prepared baking dish.
- Bake until just set, about 50 minutes. Serve warm.
