Ingredients
Scale
- 4 tablespoons butter
- 1/2 pound diced smoked ham
- 1 small yellow onion, coarsely chopped

- 8 eggs, lightly beaten
- Salt and freshly ground black pepper, to taste
- 8 thick slices of toast, buttered
Instructions
- In a large cast iron skillet over medium heat, melt butter. Add diced ham and cook until ham is golden brown, about 4 minutes. Add onions and peppers, and cook an additional 4 minutes.
