Maduros (Fried Sweet Plantains)

  • 4 ripe sweet plantains
  • 1/4 cup vegetable oil, for frying


  1. Peel the plantains. Quarter-cut each plantain by cutting in half lengthwise and then crosswise.
  2. In a large skillet, heat vegetable oil over medium heat until shimmering. Add plantain sections. Turn once after the underside caramelizes.
  3. On a plate lined with paper towels, drain plantain sections.
  4. Serve warm.
