- 4 ripe sweet plantains
- 1/4 cup vegetable oil, for frying
- Peel the plantains. Quarter-cut each plantain by cutting in half lengthwise and then crosswise.
- In a large skillet, heat vegetable oil over medium heat until shimmering. Add plantain sections. Turn once after the underside caramelizes.
- On a plate lined with paper towels, drain plantain sections.
- Serve warm.
