For the fried pickle chips:

  • Vegetable oil or peanut oil, for frying
  • 1/2 cup flour
  • 1 teaspoon Italian seasoning
  • 1 1/2 teaspoons garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon hot sauce
  • 1/2 cup water
  • 16 ounces dill pickle chips, drained and dried on paper towels

For the comeback sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Heat 1 inch of oil in a cast iron pot until the oil reaches a temperature of 375 degrees F.
  2. In a pie plate, whisk together the flour, Italian seasoning, garlic powder, salt, and pepper. Add the hot sauce and water, mixing until the coating is smooth.
  3. Line a plate with paper towels.
  4. Working in batches, dredge the dill pickle chips in the batter, tossing gently to coat. Carefully drop each coated chip into the oil. Using a slotted spoon, remove pickles from the oil once they have turned golden, about 2 minutes. Transfer the fried pickle chips to the prepared paper towel-lined plate. Monitor the oil temperature throughout the frying process.
  5. To make the comeback sauce, mix all ingredients until smooth. Cover and refrigerate until ready to serve.

Notes

Comeback sauce can be prepared up to 1 day in advance.
